Sweet Salmon Ingredients *Salmon fillet(s) *Honey *Cilantro *Italian Parsley *Mandarin oranges *Red Peppers *Green Peppers *Orange Peppers *Fresh Dill *Onions *Strawberries *Scallions *Fresh Lemon *House seasoning Steps *Sections the oranges and quarter the strawberries *Slice the peppers, scallions and onions lengthwise *Wash and separate the dill *Place Salmon fillet (skin down) on sprayed baking tray *Sprinkle house seasoning (mine is a mix of lemon pepper, cayenne pepper, cumin, curry and garam masala) *Arrange on top of fillet oranges, strawberries, onions, peppers, dill, cilantro and parsley. *Mix honey and freshly squeezed lemon together in a bowl and pour over the salmon *Lightly cover baking tray with aluminum and place in oven with broil setting of 350 degrees. *Depending on how well you like your fish done your salmon should be cooked in about 17-25 minutes. For beginners if you want to know your fish is cooked stick your fork in the thickest part and if the fish flakes easily and has a uniform opaque hue it is done *Remove salmon fillet from baking tray careful to leave the liquid behind and taking just the ingredients on top of the salmon. I usually serve this salmon with a side of broccoli slaw, coconut infused rice and garlic bread. Ps:- Normally you wouldn't have that much honey and lemon but on this particular occasion I had a pretty thick salmon fillet and I wanted to ensure that the flavor made it all the way through.

  14. During Ramadhan I take advantage of people's hunger by taking whimsical trips with recipes. This year I instituted a swahili night every week where the whole menu is based on Pwani foods. So here is my recipe for mkate wa sinia except I think I am missing something vital cause I don't feel it is spongy enough. Ingredients: Rice:Sugar:Coconut Milk 1.5:1:2 1 egg white 1 tsp of yeast Cardamon (your discretion I usually use a handful cause I love the smell) Steps: * Soak rice in cold water all night * Sieve water from rice * Blend rice with sugar,cardamon(use a mortar and pestle), yeast and coconut milk. * Let mixture sit and yeast to ferment * Mix in egg white * Pour mix in baking dish and put in oven at 350 Celsius for 30-40 minutes. * If color is not to your liking you can broil the top to redden the color. * Cut into serving pieces and enjoy. So yea can someone advice as to how to make it more spongy. So far its fine to all the people from Pwani I have given but I want to lighten it a bit and perhaps add some saffron or rose water.

As for bigots and Islamophobes don't you think we have invited this scrutiny ourselves by closeting our religion? Lately I feel like some Muslims push the envelope when it comes to certain things. There are some among us that feel the need to wear our religion on our sleeves. Its all well and good but if we took part in the community and society we live in instead of being secluded perhaps some of these 'bigots and Islamophobes' wouldn't exist. They would understand why Ahmed from down the street wears a khamis on Fridays or why Salma can't shake hands with men...... Its just a thought........

  22. I was listening to him giving an interview on NPR the other day and he was questioned about the nuts and bolts of his policies, which center on anti corruption. The interviewer brought up the fact that he failed to pay taxes and owes the IRS about 2 million dollars and Wyclef blamed his accountants for the oversight.They also asked him about the misuse of foundation money that he raised for Haiti. He paid himself for concerts and other things with donation money. Sounds like he is already on the right track to being a presidential candidate
